If you’re looking for an impeccably clean, crisp, and refreshing beer, Helles Lager is the gold standard.
Originating in Munich, Germany, the word Helles translates simply to "bright" or "pale". It was crafted as Bavaria's answer to Czech Pilsners—a golden, malt-forward lager where smooth grain character takes centre stage, backed by gentle noble hop aromas and a clean, low bitterness.
Here is what makes a traditional Helles special, and how we brought our own SIBA 2025 Gold-winning, gluten-free version to life down on the Leith Shore.
While all three are pale lagers, they offer distinct drinking experiences:
Pilsner: Sharper and more hop-forward, with a noticeable bitter bite at the finish.
Standard Mass-Market Lager: Often brewed quickly with corn or rice additives, leading to a thinner body and neutral taste.
Helles Lager: Smooth, rounded, and malt-accented. It delivers subtle biscuit and bread-crust notes with a soft bitterness, making it effortlessly sessionable.
When we set out to brew Leith Helles, our rule was strict: it had to taste identical to its gluten-containing peers. Nobody should have to compromise on flavour, body, or mouthfeel just because a beer is certified gluten-free.
To achieve that authentic Bavarian depth without gluten, we give Leith Helles an extended 8-week conditioning period. That long, slow maturation allows the beer to settle naturally, building a rich malt body, crystalline bright clarity, and a crisp finish.
We also dialled the carbonation up as high as possible while keeping it smoothly pourable on tap—giving every pint that signature lively, refreshing snap.
While we emulate the classic Munich style, we give our Helles a modern craft edge. We combine traditional Saaz hops (for that classic spicy, floral noble character) with a delicate addition of Cascade hops to introduce subtle citrus brightness.
The result is a beautifully balanced, impeccably clean 4.4% lager that quickly grew to become a staple on our taps—taking home Gold at the SIBA Awards 2025 for Best Session Lager alongside a finalist spot for 'New Beer of the Year' at the Brewer’s Congress.
